Okay, so what is Grape Stomping and why do we care? Long story short it is a super traditional winemaking method where the Romans rather than using a wine press (unlike rest of us who carry one in our kitchens!) used feet to crush the grapes, release juices & begin the fermentation process. This method dates back to 3rd Century (...or as Wikipedia says so) and while extremely cumbersome brings an eclectic flavor the wine that cannot be created through a press. Before you freak out and think its the feet that give this added flavor, this process is extremely hygienic and the wine that gets produced is one of the most sanitized (I mean it does contain alcohol so all the germs probably die before it comes in your glass!)
